"Omnisense": The story of Senses

Omniscience means the state of knowing everything."the notion of divine omniscience".

And, Hence we at Lore coined "OMNISENSE" on the same lines of science to senses, or everything about the senses.

The Menu features the shards of every sensory what a human brain could resonate on; not denying the most intriguing of all "Common Sense"

Sight - Smell - Hear - Feel

As Lore is always about the "Art of Storytelling through food" , Omnisense makes it as the art of storytelling through food using the senses Or quite clearly "Story of senses".

Lore's primary pillar being Locavore and using the local produce and enhancing it using Modern techniques, Lore's cooking techniques not only harnesses the local produce but elevates the produce where it can be used to its potential and raising the bar at every possible way. Farmlore is one such place where we the "Core of Lore" have the over all control of whats sowed and whats grown using organic farming techniques and seasonal approach, By formulating this we are able to achieve produce which has higher sense of characteristics.

Omnisense immerses the notion of dining and curates a experience which every diner would appreciates, the smallest of details are focused, be it the serve ware or be it the ideology in the creative process there is layers of stories in every course.

We wanted to keep the element of surprise intact, Hence the revealing of the recipes created are curtailed, Although not all the 14 courses are described here, Omnisense is a much bigger story to tell, This edition of Omnisense was curated for Hyderabad.

The Small Bites ( One for every sense)

Marigold & Malgova : SIGHT is what we wished to portray - Colour being Yellow, We wanted to harness the produce what we got from Farmlore, The mangoes are a special breed called Malgova which has sweetness more than that of the overrated Alphonso( which is never really Indian), Malgova on the other hand bestows being local, The marigold is one such flower which is quite versatile in terms of cultivation and harvest, it has a unique tartness which helps controlling the sweetness what the Malgova has to offer.

The Small Plates ( One for every sense)

Grassy Whiff : SMELL is what we wished to portray here- Invariably it also happened to blend in with the colour green, The Local Melons are compressed in their juices, Pairing it with an array of ingredients which compliments each other, the charred mangler cucumber seeds, mint caviars are a few of the components which added more depth to the recipe, the aroma was a perfume created from distill of grasses of the neighbourhood melon farm.

The Large Plates ( One for every sense )

The Big B : FEEL or textures , The Bannur Lamb of Karnataka is one good local produce when it comes to Lore's menus, we at lore moved away from the lamb racks which are imported from down under, we believe that there are loads of good produce in our midst which hasn't been harnessed to its potential, The first time our test kitchen worked on Bannur Lamb, It was much more than just good quality lamb, the flavours worked really well and the amazement when it comes to its other versatile organs made it a perfect ingredient to showcase textures, the Bannur brain butter, the sauce which is made from the marrow and the floss made elements on the plate harness feel.

The Showstopper (All in one)

The Corn Connection : Desert could be one course where levels of creativity can be expressed and accepted, Pop corn and Movies are a match made in heaven, Hyderabad is known for its "Tollywood" and the film city, it marks the colourful nature of the industry which has a strong hold in Indian cinemas, to portray a dessert which echoes all of this symbolically, as well as being true to the concept of Omnisense - Popcorn Ice cream with all its works and Movie theatre sounds of classic cults proved to blend in with the theme for the night.

No fine dinning is complete with out a good wine pairing list "Omnisense" is a sensory dining experience, which ticks all the cords.
